Blueberry Croissant Bread Pudding

Ingredients

  • 3 large croissants, chopped
  • 1 1/2 cup fresh blueberries
  • 1 (8 ounce) cream cheese, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup half and half

Instructions

  1. Fill a medium size bowl with croissant pieces and blueberries. Mix together.
  2. In a bowl of a stand mixer, cream together cream cheese and sugar.
  3. Slowly beat in eggs, vanilla, and half and half.
  4. Using a 9-inch baking dish, pour the mixed croissant pieces and blueberries into the baking dish. Pour the cream cheese mixture evenly over the croissant pieces.
  5. Cover and allow to soak over night or for several hours.
  6. Preheat oven to 350ºF for 40 minutes until set in the center and golden brown.
  7. Serve warm.
