Lazy Morning Breakfast

Ingredients
  

  • 4 eggs
  • 2 tbsp butter
  • 2 avocados
  • 1 lemon
  • 2 tbsp Tajin
  • 2 slices challah bread
  • 3 cups arugula
  • 1/4 cup red wine or balsamic vinaigrette
  • 4 slices prosciutto
  • Kosher salt and pepper to taste

Instructions
 

  • In a small sauce pan, bring water to a soft boil. Gently place eggs into water and softly boil for 7 minutes. Remove eggs from water and place into a bowl of chilled ice water. Allow to cool for several minutes.
  • While eggs are cooling, in a small bowl or pan, melt butter in a microwave or stove top. Brush bread slices with melted butter. Heat a grill pan over medium heat. Grill bread until toasted.
  • In a medium size bowl, mash together avocados, lemon, and Tajin. In a separate bowl, toss together arugula and a vinaigrette.
  • To plate, spread slices of bread with smashed avocados. Layer with arugula and torn pieces of prosciutto. Nestle egg into a bed of prosciutto. Slice egg open right before serving. Season with Kosher salt and pepper.

Margaritas hold a dear place in my family’s heart. Not only have we used my grandfather’s award-winning recipe at Casa Vega since 1956 but my father also wanted to name me Margarita, the Mexican equivalent of Margaret. Thankfully, my mom talked sense into him and made the point the daughter of Casa Vega can not be named Margarita. I may not be named after this special drink but the story will always make me smile.
