Ingredients
- 8 cobs of corn
- 2 tablespoon butter, softened
- 1/2 cup green onions, chopped
- 1/2 cup cilantro
- 1 lime, juiced
- 1/2 cup cotija cheese
- 1/2 teaspoon Tajin
- salt and pepper, to taste
Instructions
- Grill corn until crisp, tender. Allow to cool. Cut corn off of the cob.
- In a large bowl, mix together corn, butter, green onions, cilantro, lime juice, and cotija cheese.
- Season with Tajin, salt, and pepper.
