Notes

Ingredients

  • 8 cobs of corn
  • 2 tablespoon butter, softened
  • 1/2 cup green onions, chopped
  • 1/2 cup cilantro
  • 1 lime, juiced
  • 1/2 cup cotija cheese
  • 1/2 teaspoon Tajin
  • salt and pepper, to taste

Instructions

  1. Grill corn until crisp, tender. Allow to cool. Cut corn off of the cob.
  2. In a large bowl, mix together corn, butter, green onions, cilantro, lime juice, and cotija cheese.
  3. Season with Tajin, salt, and pepper.
