Lemony Arugula Avocado Toast
This isn’t your ordinary avocado toast. The tangy lemon and savory prosciutto will have you craving this for breakfast, lunch, and dinner!

Ingredients
- Lemon Vinaigrette
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon, pepper
- Avocado Mash
- 1 ripe avocado, pitted
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- pinch cayenne pepper
- 2 slices, prosciutto
- 2 slices bread, toasted
- 2 cups baby arugula
Instructions
- To make the vinaigrette, whisk together lemon zest, juice, and olive oil. Season with salt and pepper. Scoop the avocado out into a small bowl. Add the lemon zest, juice, salt, cayenne pepper and mash together.
- Spread the avocado mash on the toasted bread. Place a slice of prosciutto on top.
- Toss arugula with the vinaigrette and place on top of the avocado mash.
