Lemony Arugula Avocado Toast

This isn’t your ordinary avocado toast. The tangy lemon and savory prosciutto will have you craving this for breakfast, lunch, and dinner!

  • Lemon Vinaigrette
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon, pepper
  • Avocado Mash
  • 1 ripe avocado, pitted
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • pinch cayenne pepper
  • 2 slices, prosciutto
  • 2 slices bread, toasted
  • 2 cups baby arugula


  1. To make the vinaigrette, whisk together lemon zest, juice, and olive oil. Season with salt and pepper. Scoop the avocado out into a small bowl. Add the lemon zest, juice, salt, cayenne pepper and mash together.
  2. Spread the avocado mash on the toasted bread. Place a slice of prosciutto on top.
  3. Toss arugula with the vinaigrette and place on top of the avocado mash.
