  • 4 cups milk
  • 1/2 cup short-grain rice (I prefer to use Italian Arborio rice)
  • 1 cinnamon stick
  • a pinch of salt
  • 1/2 cup sugar
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 1/4 cup raisins (optional)
  • 1 kiwi, sliced
  • 1/4 cup pomegranate perils
  • 1/4 cup blueberries
  • 1 apricot, sliced
  • 3 strawberries, sliced
  • 1 passion fruit, halved
  • coconut chips
  • edible flowers

  1. In a crock pot on low heat stir in milk, rice, cinnamon stick, salt, sugar, butter, vanilla extract, and raisins.
  2. Stirring occasionally, pudding is done when milk has been mostly absorbed and rice is soft about 3 hours on low.
  3. Serve in a bowl with fresh fruit sprinkled with coconut chips and edible flowers.
