Casa Vega Tortilla Soup

Tortilla Soup to “warm the souls” on their journey to the celebration; perfect for Dia de Los Muertos (or really any day of the year!)

Casa Vega Tortilla Soup

  • 2 ounce canola oil
  • 1/2 cup white onion, chopped
  • 1 tablespoon chili paste
  • 1/2 teaspoon cumin, garlic powder, dried oregano and salt
  • 1/4 teaspoon white pepper
  • 2 cups grilled chicken breast, diced 
  • 1 cup tomato sauce 
  • 4 cups water 
  • 1/2 cup chicken broth
  • 1 large avocado, diced 
  • Tortilla chips or strips (garnish)
  • cotija cheese, crumbled (garnish)


  1. Heat oil in a pan. Add onion and cook until translucent.  Add chili paste, spices, diced chicken, and tomato sauce. Cook until fragrant. Pour in water and chicken broth, bring to a boil and reduce to a simmer. Ladle into a bowl and garnish with diced avocado, tortilla strips and cotija cheese.
