Ingredients

  • 2 medium avocados
  • 4 eggs
  • 2 pieces of cooked bacon, crumbled
  • 1/4 cup Cheddar cheese, shredded
  • season with salt and pepper
  • fresh salsa (optional)

Instructions

  1. Preheat oven to 425F.
  2. Cut avocados in half and remove the pit.
  3. With a spoon, scoop out little extra avocado widening the hole for the egg.
  4. Place avocado halves in a muffin pan to keep them stable while baking.
  5. Crack the raw egg into the avocado.
  6. Sprinkle with cheese.
  7. Top with cooked bacon.
  8. Bake for about 15 minutes.
  9. Season with salt and pepper.
  10. Serve warm with fresh salsa on the side (optional).
