Casa Vega Tortilla Soup

Servings 4

Ingredients
  

  • 2 ounce canola oil
  • 1/2 cup white onion, chopped
  • 1 tablespoon chili paste
  • 1/2 teaspoon cumin, garlic powder, dried oregano and salt
  • 1/4 teaspoon white pepper
  • 2 cups grilled chicken breast, diced 
  • 1 cup tomato sauce 
  • 4 cups water 
  • 1/2 cup chicken broth
  • 1 large avocado, diced 
  • Tortilla chips or strips (garnish)
  • cotija cheese, crumbled (garnish)

Instructions
 

  • Heat oil in a pan. Add onion and cook until translucent.  Add chili paste, spices, diced chicken, and tomato sauce. Cook until fragrant. Pour in water and chicken broth, bring to a boil and reduce to a simmer. Ladle into a bowl and garnish with diced avocado, tortilla strips and cotija cheese.

Margaritas hold a dear place in my family’s heart. Not only have we used my grandfather’s award-winning recipe at Casa Vega since 1956 but my father also wanted to name me Margarita, the Mexican equivalent of Margaret. Thankfully, my mom talked sense into him and made the point the daughter of Casa Vega can not be named Margarita. I may not be named after this special drink but the story will always make me smile.
