Casa Vega Tortilla Soup
Ingredients
- 2 ounce canola oil
- 1/2 cup white onion, chopped
- 1 tablespoon chili paste
- 1/2 teaspoon cumin, garlic powder, dried oregano and salt
- 1/4 teaspoon white pepper
- 2 cups grilled chicken breast, diced
- 1 cup tomato sauce
- 4 cups water
- 1/2 cup chicken broth
- 1 large avocado, diced
- Tortilla chips or strips (garnish)
- cotija cheese, crumbled (garnish)
Instructions
- Heat oil in a pan. Add onion and cook until translucent. Add chili paste, spices, diced chicken, and tomato sauce. Cook until fragrant. Pour in water and chicken broth, bring to a boil and reduce to a simmer. Ladle into a bowl and garnish with diced avocado, tortilla strips and cotija cheese.
