Lemon Glazed Blueberry Doughnuts

Ingredients
- 1 cup plus 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup sugar
- 1 egg
- 1/2 cup milk
- 1 teaspoon pure vanilla extract
- 2 tablespoons vegetable oil
- 1/2 cup fresh blueberries
- Lemon Glaze
- 1 3/4 cups of confectioners sugar
- 1/4 cup of lemon juice
- zest of one lemon
- 1 teaspoon salted butter, melted
Instructions
- Preheat oven to 350F. Grease doughnut pans and set aside.
- In a large bowl, combine flour, baking powder, salt, and sugar.
- Stir in egg, milk, vanilla extract, and oil. Gently fold in blueberries.
- Spoon batter into greased doughnut pans. Bake for 10 minutes until tester comes out clean.
- Allow doughnuts to cool. Remove from pan.
- To make the lemon glaze, in a separate bowl, whisk together confectioners sugar, lemon juice, zest, and butter.
- Dip cooled doughnuts into lemon glaze. Set aside to set.
